Colored oil poured into warm milky water shows self organization, or "unmixing." Related to formation of life and self organization of lipid structures.
I believe this demo is more effective if you just pour the oil solution into the water without mixing it in.
Setup: In a 1 liter beaker mix one (1 oz?) coffee creamer into 800 ml of warm (~100 degrees F) water. Mix an ~10 mm ribbon of ultramarine blue oil paint into 30 cc olive oil. Water must be warm, so if not using immediately it must be kept in a thermos. Give the presenter 2 beakers and 2 thermoses of the water (so when it doesn't work the first time they can try again). Also give 2 small beakers with 5 ml each of the oil mixture. To display, use a doc cam with lighting from above.
